Lobster Bands
Bands are used on Lobster, Large Prawn and Crab claws to protect the produce from each other and all those handling them from fisherman to chef. Special banding tools are used on the smaller bands (15 x 10, 20 x 13mm) to allow perfect application and larger bands are applied by hand. The narrower bands are usually applied to softer shell species to avoid applying too much tension and causing damage.
